What's For Dinner Wednesday!

Every Wednesday evening we get together with our neighbor Dee, that lives over the hill and have dinner here on the farm. Sometimes I make the main course and she makes the sides and sometimes it's the other way around. This time it was my turn to make the main dish and I just had to share it with you because it was so yummy! At the request of Dee for something Italian, I made stuffed shells and the recipe is below!


Stuffed Shells

Ingredients:

1 package of jumbo pasta shells
1/2 pound ground hamburger
1 container of ricotta cheese (16 oz)
1 pound of shredded mozzarella (divided)
12 ounces of Parmesan cheese (divided)
2 eggs- beaten
1 teaspoon of salt (optional)
1 tablespoon of dried parsley
1 teaspoon of black pepper
2 teaspoons of garlic (or more if your a garlic person like I am!)
1 teaspoon of onion powder
1 jar of spaghetti sauce (we like mushroom)

Directions:

Pre-heat oven to 350 degrees.

1. Boil water and cook pasta approx. 10 minutes until they are al dente. Drain and rinse.
2. Brown the meat.
3. Mix together ricotta cheese, half the mozzarella, half the Parmesan, eggs, salt, parsley, pepper, garlic and onion. ***Please see note at the bottom*** Split mixture into two mixing bowls. Leave one bowl as is and in the other bowl mix in the ground burger.
4. Start filling up the shells and lay them into a 9x13 baking dish.
5. Spread remaining mozzarella cheese and Parmesan cheese over the prepared shells. Then pour the sauce over top.
6. Put in oven and bake on 350 degrees for 45 minutes.

***Note***
We like to have some of our shells be just the cheese mixture and some with the meat and cheese mixture. That is why I divide the mixture. If you want it to be all one flavor you can skip this step!

I promise next time to try to remember to get a picture so you can see what it looks like, I know with recipes it is much more appealing to see the food!!

First Steps!

Ladies and Gentlemen K took her first steps over the weekend! S's family was gathered at Dee's house for a surprise birthday party for MomMom. While we were waiting for her to arrive K took three steps from me to her cousin A who was bribing her with snacks! We even caught it on video, and as soon as I can get it from my BIL I will upload it on here so you can watch.

Our Labor Day weekend was packed full of events. Bugs MomMom's 60th birthday is today (If you're reading this MomMom... HAPPY BIRTHDAY!) so we decided to give her a party Saturday! It worked out so great, she had no idea it was coming, and we all had such a good time teasing her with "over the hill" presents and a birthday cake with exactly 60 candles on it! We got lots of pictures...

Sunday we attended a memorial service for SIL's grandmother who passed away unexpectedly. Our thoughts and prayer have been with her family all week. Yesterday we had a Labor Day cookout at Dee's house again! Cooked burgers on the grill, some chicken and lots and lots of yummy side dishes! It was so nice to have most of the family together and enjoying the company of Miss Dee (who is practically family too)! Hope you all had a good weekend too!

Blood Work and Photos!

Just before we left for vacation we got a phone call from the doctors office saying that at Bugs nine month appointment when they did her finger prick and blood test they found elevated levels of lead in her blood. So we had to take her to the hospital and have blood drawn so they can do a more through test. Naturally I was very nervous and made S take the morning off from field work to go with me. I wasn't sure how Bug would take it and I wasn't sure how I would take it either! 

Of course my little trooper had to prove me wrong! She sat there like a big girl with mommy holding her and watched every move the nurses made. When the stuck her with the needle I had to look away with tears in my eyes but not Bug, she just watched everything they were doing and never even flinched! When they were done the nurses put a pretty Dora band-aid on her arm that matched her outfit and couldn't stop gushing over how they never had a baby that didn't cry!

Monday afternoon we went to have dinner with our neighbor and friend, Dee. She invited us and the in-laws over to celebrate the end of first cutting! We had an amazing meal and dessert, Thanks Dee! Afterwards we all sat on the porch talking and somehow ended up with an impromptu photo shoot of Bug! We had a blast taking pictures of her, I can't wait to get some of this printed out and blown up! Too cute!
