Sweet Potatoes

Baby Food Entry #2- Sweet Potato

  1. Wash potatoes and prick skin several times with a fork.
  2. Wrap sweet potatoes in aluminum foil and place on a baking sheet. 
  3. Bake at 400* for 30 to 60 minutes. (My medium sized potatoes took about 45 minutes before they were soft and cooked through). 
  4. Unwrap and cut in half to cool a bit.

5. Once they are cooled scoop out the fleshy insides using a spoon.
6. Puree the flesh until nice and smooth. I had to add a bit of water to mine to make it smooth as it was a bit chunky.  
7. Divide into servings and freeze!

    Happy St. Patty's Day!

    Today is St. Patrick's Day! S took K and I out to lunch today, so I had to make sure K was sporting her green! She got this really cute outfit from Cassie when she was born and I've been so anxious for it to get warm enough for her to wear it.




    Since it was so nice out when we got home I decided to take a walk with K to enjoy the lovely weather! It was the first time she's been in the stroller and I think she enjoyed herself!

    Adventures in Baby Food

    Baby Food Entry #1 - Carrots

    I have decided to make my own baby food. A few friends have done it and said how easy it was and how much fun they had doing it. So I decided to give it a whirl. I made my first batch yesterday... K's first food will be carrots! I really enjoyed cooking for her.

    1. Cut carrots up into slivers. (I used 'baby' carrots)
    2. Put them into a pan with just a little bit of water and cook/steam until they are very tender. Be sure to watch the water level while the carrots are cooking or you will burn them like I did the first batch!
    3. Save any of the leftover water they were cooked in.
    4. Put cooked carrots into blender and puree until smooth. Adding cooking water (if needed) to thin.

    K got to try it this afternoon, she wasn't so sure at first but I think she'll enjoy it more once she gets used to the idea. Here's some pictures of our first try!

    Grandma C's Birthday!

    Mom's birthday is tomorrow so I threw her a little mini party here. I made us all Chicken Parmesan for lunch and for dessert mom's favorite angel food cake with strawberries and ice cream! It was a good time and I think mom enjoyed spending time with K on her birthday!

    4 month well-check, a month late!

    We finally got to have K's 4 month check up today, even though she'll be 5 months old on Sunday. Because of how sick she was with RSV this past month she was unable to have her shots so we had to put off her well-check. Little miss is 16lbs 8oz and 26 inches long, she's in the 85 percentile for both. The doctor said her heart murmur is definitely less noticeable than it was 2 months ago (yay)! Poor kid had to have two shots and an oral vaccine. I feel so sad when I see her little face react to the pain, but I know it's for her health. I truly think it's harder on me than her because as soon as it's over I nurse her and she seems to forget all about it!

    We also got the o.k. to give her rice cereal and with in the next few weeks start her on baby food. I am so excited, S and I actually gave her her first taste of rice cereal a couple of days ago and she gobbled it up! Pictures to come soon of this escapade, I promise! As a matter of fact I have many, many pictures to upload and show you all. :)

    First Food!

    K got to have rice cereal today for the first time. It went over OK... she still has her tongue thrust reflex and she pushed out most of what we gave her.

    Now I'm getting the hang of it!
